Big food is big tobacco. When the large tobacco companies were under fire in the 1980s they were the most cash rich companies in the country. They got that way by employing chemists and engineers who made tobacco more addictive by cycling nicotine levels. The big lawsuits had them looking for someplace to put their cash so they started buying up large food processors and moved their addiction experts over to the food industry.
